Indonesian Green pancakes recipe with grated coconut

This Green Pancakes recipe is really one of the traditional Asian desserts. It’s delicious with sweet grated coconut and not to mention the lovely green sheets that‘s really tasteful with pandan extract.
And above of all, this is really the favorite of little children, with the attractive color and the sweet taste; they are really irresistible for the children eyes. And I’m sure they would like it.
So if you want to go somewhere with your children, maybe to the zoo or park, this snap might be a good solution for a change than some sandwich. It does really fill your stomach so you don’t have to worry that you’re hungry again for the next hour.
Indonesian Green Pancakes Recipe:
Preparation time: 30 minutes
Cooking time (including making sheets): 1 1/2 hour
For 20 pieces
Ingredients for the sheets:
- 250 gram all purpose flour
- 375 cc coconut milk
- 2 eggs
- 1/2 tsp salt
- 50 cc pandan pasta (you can easily obtain this at the Chinese supermarket)
- Some butter
Ingredients for the filling:
- 250 gram grated coconut
- 150 gram palm sugar
- 2 pandan leaves
- 125 cc water
- 1/2 tsp salt
How to make the filling:
Mix the grated coconut, palm sugar, pandan leaves, water and salt. The put it on the low fire until it’s cooked and moist. Set aside.
Instructions for the sheets:
- Make a mixture of flour and salt. Then add the eggs, stir it while you add coconut milk a little bit at the time. Make sure that you’ll get smooth mixture. To achieve this, you can also use mixer for a few minutes. Then add the pandan pasta to make the green color. Stir it until well mixed.
- Prepare a pancake pan, smear with butter and make a thin pancake of the mixture. When it’s ready put it on the plate and add enough filling in the middle of the sheets and fold one side and then follow the other side and roll to the edge of the sheets.
- Ready to serve.
